Ingredients:
6 cups fresh spinach
1 cup sliced strawberries
¼ cup crumbled feta cheese (or goat cheese)
¼ cup chopped pecans or walnuts (lightly toasted for extra crunch!)
¼ cup red onion, thinly sliced
½ avocado, sliced (optional)
Dressing:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey (or maple syrup)
1 tsp Dijon mustard
Salt & pepper to taste
Directions:
In a large bowl, combine spinach, strawberries, red onion, feta, and nuts.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
Drizzle dressing over the salad and toss gently.
Top with avocado slices if using. Serve fresh and enjoy!
