Ingredients:
1 lb chicken breast or thighs, diced
2 tbsp olive oil
1 sweet potato, diced small
1 zucchini, sliced
1 red bell pepper, sliced
2 cloves garlic, minced
1 tsp paprika
½ tsp Italian seasoning
Salt + pepper to taste
Optional: sprinkle of parmesan or feta
Directions:
Heat olive oil in a large skillet over medium heat.
Add chicken, season lightly, and cook until browned.
Add sweet potato + cook 5–7 minutes until softening.
Add veggies, garlic, and spices. Stir and cook until tender.
Top with cheese if desired and serve warm.
